Ingredients

2 servings
  • 1/2 Cup of dry chile de árbol pepper for the sauce
  • 1/2 Cup of almond fillet, for the sauce
  • 1/3 of Cup of sunflower seed for the sauce
  • 2 cloves of garlic finely chopped, for the sauce
  • 1 Cup of Oli Oil from Nutrioli ® for the sauce
  • to taste of Salt
  • 2 pieces of salmon fillet (150 to 200 gc / u)
  • 2 cups of asparagus chopped
  • 2 pieces of potato cut into segments
  • 1 piece of sweet potato cut into segments
  • to taste of yellow lemon sliced, to decorate

    Preparation

    Preheat the oven to 180 °C. ( 356°F)
    For the salsa macha, grind the chiles in the Molcajete until lightly ground.
    In a skillet over medium heat toast the almonds and sunflower seeds. Add the garlic and a cup of Oli de Nutrioli® olive oil, cook 10 minutes on low heat until the almonds have a golden color, moving constantly. Season with salt and cool.
    In a oven proof dish place the salmon fillets and add the sauce of the árbol chile, marinate for 15 minutes.
    Place the salmon in a tray, add the asparagus, the potatoes, the sweet potatoes, varnish the vegetables with the sauce, season with salt and pepper and bake for 25 minutes.
    Serve accompanied with pasta.

    PRESENTATION

    On a plate accompanied by vegetables and decorated with slices of yellow lemon.

    TIPS

    If you want the salmon to medium term and not well cooked, remove from the oven to the middle of the cooking time and continue the baking of the vegetables until they are soft.
