Shrimp with Corn Esquites

One of the typical Mexican snacks that you find on almost any street corners are, without a doubt, Esquites or Mexican corn served in a bowl or container. But to give them a different flavor, we prepare this recipe for Esquites with Shrimp and Chile Guajillo, which you can also serve with mayonnaise, fresh cheese, lemon and chili pepper. For this easy recipe for esquites, you must take into account that if you over cook shrimp, they will become chewy, so pay close attention.

Ingredients

6 portions
  • 2 tablespoons olive oil
  • 1 onion, cut into quarters
  • 3 cloves garlic
  • 6 guajillo chilies, seedless and deveined
  • 1 ancho chili pepper, seedless and deveined
  • 4 tomatoes, cut into quarters
  • 1 corn
  • 2 allspices
  • 4 cups Water
  • 3 tablespoons shrimp powder
  • enough salt
  • 4 tablespoons butter
  • 1/2 cups onion
  • 1 tablespoon garlic
  • 4 cups cacahuazintle corn
  • 4 leaves epazote
  • enough salt
  • 1/2 kilos shrimp, clean and unpeeled
  • enough mayonnaise, for serving
  • enough fresh cheese, crumbled, for serving
  • enough chilli powder, for serving
  • enough epazote, to decorate
  • enough lemon, for serving

Preparation

In a saucepan heat the olive oil and fry the onion, garlic, chilies and tomatoes until softened. Add pepper, corn, water and shrimp powder, cook 10 minutes more, remove and cool slightly.
Remove the corn and liquefy the previous preparation with salt and strain if necessary.
In a deep pan, melt the butter over medium heat and cook the onion, garlic, corn, epazote, season with salt and add the shrimp. Once the shrimp have changed color, fill with the sauce, let it boil and cook until the corn is soft.
Serve with mayonnaise, fresh cheese, chili powder, epazote and lime.

PRESENTATION

Serve with mayonnaise, fresh cheese, lime and chile piquín.

TIPS

Do not overcook the shrimp so that they do not become though.
