Ingredients

4 portions
  • 500 grams shrimp, medium peeled and deveined cut into pieces
  • 1 tablespoon lemon juice
  • 1 onion, finely chopped
  • 2 tablespoons olive oil
  • 1 red pepper, chopped
  • 2 cloves garlic
  • 2 tablespoons chipotle chili
  • 1/4 tablespoons chilli powder
  • 3/4 cups fresh coriander, chopped
  • 1/2 cups Red wine
  • 500 grams beefsteak tomato, chopped
  • tortillas, To accompany

Preparation

Heat the oil in a large skillet and brown the onion and peppers for 4 minutes or until lightly browned.
Add the garlic, chili powder, chipotle and salt and pepper and continue cooking for 2-3 minutes.
Add the wine, cilantro and tomatoes and heat until it boils.
Lower the temperature and continue cooking until part of the liquid has evaporated (20 minutes).
With a wooden spoon, squeeze the tomatoes and mix the sauce well.
Add the tomatoes and lemon juice and cook for 4 minutes or until the shrimp are cooked.
Remove from heat and serve.

PRESENTATION

Accompany the tortillas, avocado and fresh cheese. It can also make it more spicy.
