Lobster is an exquisite and very elegant dish. This recipe is simple but delicious because it highlights the true flavors of the lobster when accompanied with a butter sauce.

Ingredients

6 portions
  • 800 grams lobster
  • 1/2 cups white vinegar
  • 1 stick butter
  • 1 tablespoon chives, finely chopped

Preparation

Bring 15 cups of water and 1/2 cup of white vinegar to a boil in a large pot.
When boiling add the lobsters and cook for 3 minutes.
Remove from the water (do not throw water) and with a towel take each lobster and separate the tails from the heads by squeezing the lobsters. Also remove the hands and return the tails and hands to the boiling water and cook for 5 more minutes.
In a pot, heat 1/4 cup of water until it is boiling. Add the butter little by little and add to the water with a balloon whisk. Do this until all the butter is incorporated with the water.
Add the scallion to the butter, remove from the heat and put on plates to accompany the lobsters.

PRESENTATION

Serve 1 tail and 2 lobster hands with the melted butter on individual plates. Accompaniment of a white wine or champagne.

TIPS

Accompany this dish with a Chardonnay wine.
