Cucumber Sushi with Tampico de Bits

This sushi version is equally delicious, but low in carbohydrates. Prepare this recipe for cucumber sushi with spicy stuffing in just 10 minutes and enjoy a light and flavorful dish. The filling is made with tampico sauce with surimi, but cauliflower, broccoli and carrot bits are added to complement it. Serve with soy sauce, a little masago and chipotle sauce.

Ingredients

2 portions
  • 1 Eva® California Bits
  • 1 cup surimi, finely chopped, for tampico sauce
  • 1/4 cups mayonnaise, for tampico sauce
  • 1/8 cups rice vinegar, for tampico sauce
  • 1/8 cups lemon juice, for tampico sauce
  • 3 tablespoons sauce, ponzu for tampico sauce
  • 1/4 red onions, for tampico sauce
  • 1/2 cups cream cheese, for tampico sauce
  • 1 serrano pepper, for tampico sauce
  • 1 pinch salt, for tampico sauce
  • 1 pinch black pepper, for tampico sauce
  • 1/4 cups capelin or smelt roe, for chipotle sauce
  • 2 tablespoons ground chipotle pepper, for chipotle sauce
  • 1/4 cups mayonnaise, for chipotle sauce
  • 1 tablespoon lemon juice, for chipotle sauce
  • 2 cucumbers
  • 1 cup rice, cooked, to fill
  • enough salmon, cut into long strips, to fill
  • enough black sesame seed, to fill

Preparation

In a bowl, mix the California Bits Eva® with surimi, mayonnaise, rice vinegar, lemon juice, ponzu sauce, purple onion, cream cheese and serrano pepper; Season with salt and pepper. Reserve in refrigeration.
In a bowl mix the masago, ground chipotle, mayonnaise and lemon juice until you get a homogeneous mixture. Reservation.
On a board, cut the cucumber into two halves with the help of a knife, cup the center and fill with the preparation of tampico, rice, salmon, cut into slices 2 mm thick and reserve.
Serve with the chipotle and sesame sauce, and accompany it with the soy sauce. Enjoy

PRESENTATION

Serve with soy sauce, a little masago and chipotle sauce.

TIPS
