Preparation
Cut the salmon into cubes about 8mm; the tomatoes in half, remove the seeds and cut into cubes. Chop the chives and cilantro.
Mix the salmon with salt and pepper, the herbs, the lemon juice, the orange zest, the olive oil, the mayonnaise. Add the tomatoes and mix until integrated.
Place on a plate the metal ring in the center and fill with the salmon mixture pressing lightly with a spoon. Remove the ring carefully and decorate with lettuce leaves.
