Preparation
Cut the salmon into very small pieces and serve them inside a bowl. Squeeze the two lemons and add salt and pepper to taste.
Stir carefully until the salmon is well impregnated and rectified with salt and pepper. Refrigerate an hour before serving. Remove excess lemon.
Before serving, on a plate, place a little of the salmon preparation in the center. Place goat cheese on the sides and if you want a little avocado on top of the tartar.
