This version of golden tacos is a rich combination that mixes different flavors of chili peppers, textures and is a great option to consume fish. Ingredients

  • 4 ancho chili peppers, clean, for the marinade
  • 3 guajillo chilies, clean, for the marinade
  • 4 cascabel chili peppers, clean, for the marinade
  • 4 cloves garlic, for the marinade
  • 1/4 onions, for the marinade
  • 5 allspices, for the marinade
  • 1 teaspoon coriander seed, for the marinade
  • 1/2 teaspoons cumin seed, for the marinade
  • 1 teaspoon oregano, for the marinade
  • 1 leave bay (laurel), for the marinade
  • to taste salt, for the marinade
  • enough vegetable oil
  • 3 cups tuna
  • enough vegetable oil
  • enough tortilla
  • enough toothpick
  • 1/2 cups onion, finely chopped, for the guacamole
  • 1/4 cups serrano pepper, thinly sliced, for guacamole
  • 2 avocados, ripe, for the guacamole
  • 1/2 cups coriander, finely chopped, for the guacamole
  • 2 tablespoons lemon juice, for the guacamole
  • to taste salt, for the guacamole
  • 1/2 cups mango, chopped in small cubes, for the guacamole

Preparation

For the marinade, broil the chili pepper, the guajillo pepper, the bell pepper, the garlic, the onion, the fat pepper, the coriander seed and the cumin seed; soak the chiles in hot water for 5 minutes and then grind all the ingredients with a little water from the chili soak; Season with salt.
For the tuna filling, heat a pan with oil and fry the tuna for a few minutes; add the marinade and cook for 10 minutes. Reservation.
For the tacos, fill the tortillas with the marinated tuna and fry for 5 minutes.
For the guacamole, mix the onion with the chili, cilantro, avocado, lemon juice and season with salt; add the mango at the end and mix carefully.
Serve the tacos with guacamole, cream and cheese, accompany with beans and a drink of your choice.

TIPS

When you marinate the tuna, leave it as dry as possible, so that the tacos do not break when frying. It is important that the tortillas are hot to wrap the tacos.
