A delicious and very tasty tuna tartare with wholemeal bread and wasabe cream.

Preparation
First prepare the tuna dressing by mixing olive oil, echallot, parsley, lemon juice and Dijon mustard with a balloon whisk.
Cut the tuna into small squares with a sharp knife.
Mix the tuna with the dressing and reserve in a deep bowl.
With a rolling pin, flatten the wholemeal bread and cut with a circular cookie cutter. Tuesta to that they are slightly golden.
Mix fresh cream with wasabi in a deep bowl.
Arm your tartar by placing a slice of bread, a teaspoon of the wasabi cream, 2 tablespoons of the tuna tartare (you can use the same cookie cutter to place it on the bread), another bread and more tuna tartare.
Decorate with a little alfalfa germ.
