Tuna Ceviche with Tamarindo Vinaigrette

Refreshing oriental type ceviche based on practical cubes of yellowfin tuna, accompanied by cucumber, mango, jicama and pineapple that will give a very tropical touch. In addition, it has a spicy touch of apple-tree chili and is marinated in a delicious tamarind vinaigrette.

Ingredients

8 portions
  • 1/4 cups sesame oil
  • 1/4 cups tamarind concentrate
  • 1/2 cups yellow lemon juice
  • 1/4 cups soy sauce
  • 1/4 cups orange juice
  • 1 tablespoon ginger
  • 1/4 cups red onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 1/2 cups fresh coriander, finely chopped
  • 1 cup cucumber, cut into medium cubes
  • 1 cup mango, cut into medium cubes
  • 2 tablespoons Chile Apple, finely chopped
  • 1/4 cups jicama, cut into medium cubes
  • 1/4 cups pineapple, cut into medium cubes
  • 200 grams Tuna Cubes Dolores® Yellow Fin
  • 1 pinch black pepper
  • 1/4 cups fresh coriander, to decorate
  • enough sesame toast, To accompany

Preparation

For the dressing, in a bowl mix the sesame oil, tamarind concentrate, lemon juice, soy sauce, orange juice, ginger, purple onion and garlic. Mix perfectly well.
In a bowl, combine the cilantro, the cucumber, the mango, the jicama, the apple-tree chili, the pineapple and the Tuna Cubes Dolores® Yellow Fin, add the vinaigrette, and season. Marina in refrigeration 30 minutes.
Decorate the ceviche with fresh cilantro leaves and accompany it with sesame toast.

PRESENTATION

Serve the ceviche and garnish with coriander leaves, served with sesame toast.

TIPS

You can use any kind of chile to give that spicy touch that we love.
