  • 4 guajillo chilies
  • 1/4 cups achiote
  • 1/4 cups pineapple juice
  • 3 pieces black pepper
  • 1 teaspoon cumin
  • 2 tablespoons white vinegar
  • 1 tablespoon oil
  • 1/2 cups onion, finely chopped
  • 2 cups tuna in water, Herdez®
  • 1 pineapple
  • 2 avocados
  • 1/4 cups onion
  • 2 tablespoons habanero pepper
  • 1/4 cups coriander
  • 1 lemon
  • to taste salt
  • to taste black pepper
  • 6 flour tortillas, burrera
  • 1 cup manchego cheese, grated

  • enough pineapple, To accompany

Preparation

For the shepherd marinade, blend the onion with the garlic, the guajillo pepper, the achiote, the pineapple juice, the black pepper, the cumin and the white vinegar for 5 minutes.
In a pan, heat the oil and cook the onion, Herdez® Tuna in water, add the shepherd marinade. Cook for 10 minutes and reserve.
Cut the pineapple in half and hollow out.
In a bowl and with the help of a fork, mash the avocado, add the onion, the habanero, the cilantro, the lemon juice, the salt and the pepper; mix perfectly.
Grill the tortillas on both sides and fill with the tuna and Manchego cheese. Cook for 5 minutes or until cheese is au gratin.
Cut in four, serve with the guacamole and accompany with cilantro, onion, pineapple and lemon.
