Broccoli Pancakes with Cheese

These broccoli cheese pancakes are perfect for the little ones, since they present a fun and delicious way to eat vegetables. Broccoli is rich in fiber, vitamins A and C, calcium and iron, which will help them grow. In addition, pancakes also have Nutrioli DHA oil, which will provide DHA, a nutrient that contributes to the brain development of children and promotes their learning. You can use these pancakes as a snack or as a main dish, accompanied by a good garnish. Your kids will love it!

Ingredients

4 portions
  • 1 liter Water
  • 1 1/2 cups broccoli, in large pieces
  • to taste salt
  • 1 cup potato, well cooked and cut into cubes, to make pancakes
  • 1 cup mozzarella cheese
  • 1/2 cups onion, finely chopped
  • 2 teaspoons garlic powder
  • 2 teaspoons oregano
  • 1/4 cups coriander, finely chopped
  • 1 egg
  • 1/2 cups ground bread
  • to taste salt
  • to taste black pepper
  • 1/4 cups Nutrioli DHA® pure soybean oil
  • enough catsup, To accompany

Preparation

In a pot, boil the water, then cook the broccoli with salt for 6 minutes. Drain and cool under a stream of cold water.
Place the broccoli on a board and chop finely.
Put the potato in a bowl and mash until you get a puree. Add the chopped broccoli, onion, mozzarella cheese, garlic powder, oregano, coriander, egg, and breadcrumbs; season with salt and pepper and mix until you have a homogeneous consistency that you can manipulate, to form the pancakes.
On a table, form the pancakes and freeze them for 10 minutes.
Pour Nutrioli DHA® Pure Soybean Oil into a skillet. Heat over low heat, place pancakes and cook for 10 minutes. Drain on absorbent paper.
Serve and accompany with ketchup sauce.
