Ingredients

2 portions
  • 1/2 ripe tomatoes
  • 1 green bell pepper
  • 1 red pepper
  • 1 onion
  • 1 egg
  • 1 clove garlic
  • olive oils
  • 1 pinch sugar
  • 1 pinch salt

Preparation

Peel the tomato, remove the seeds, cut into small pieces and set aside.
Wash the peppers, remove tails and pips and cut into pieces not very large.
Peel and cut the thin onion and garlic.
In a casserole with a little oil brown the onion, garlic and peppers.
After five minutes, add the tomato, sugar and salt.
Keep boiling for 10 minutes.
Lower to medium heat and leave for 15 minutes more.
Shell the egg, toss it on top and stir with a wooden spoon until the egg white set.
