In a large bowl, place the yeast and sugar and mix until it is liquid.
Heat 1 cup of milk until it is warm and join the yeast mixture. Add 1/2 cup of the flour. Mix, cover and let stand for 15 minutes.
Add margarine, eggs, remaining milk, cornstarch and salt. Mix with a spoon until it is pasty.
Add, little by little, the remaining flour and knead until it is released from your hands.
Flour a dry surface, place the dough and knead well until smooth. Cover and let stand for 1 hour or up to double the volume.
In a bowl, mix the basil, cheese and chorizo.
Spread 2 refractories for large pizza (35cm in diameter).
Divide the dough into 100 portions. Distribute the filling between the dough portions and model in the balls format.
Place 50 balls in one of the reserved refractory, placing one next to the other. Repeat the operation with the remaining balls in the other reserved refractory. Cover and let stand for 30 minutes or until doubled in volume.
Heat the oven at medium temperature (180 ° C).
Brush with the yolk and bring to the oven for 25 minutes or until golden brown.
Remove from oven, cover with sauce and sprinkle with mozzarella cheese. Return to the oven for 10 more minutes or until the cheese melts. Serve immediately.
