Ingredients

8 portions
  • 2 chicken breasts, cut in butterfly shape
  • 8 leaves french lettuce
  • 2 cups crimini mushroom, in slices
  • 1 red onion, cubed
  • 1 tablespoon olive oil
  • enough coarse salt
  • enough ground black pepper
  • 4 tablespoons sugar, for the marinade
  • 6 tablespoons soy sauce, for the marinade
  • 1 teaspoon sesame oil
  • 2 teaspoons rice vinegar
  • 2 teaspoons garlic, finely chopped

Preparation

In a bowl, mix the ingredients for the marinade. Divide it into two equal parts and reserve. Marinade the chicken breast with a portion of the marinade and let stand 20 minutes in refrigeration.
Prepare your Weber® grill for direct medium fire (350º - 450ºF or 175º - 232ºC). Place a basket for Weber vegetables on a direct heat and preheat for 10 minutes.
Remove the chicken from the paired and place on the spit over medium heat. Do this for 7 minutes on each side, when the internal temperature is 165ºF or 73ºC, remove the chicken from the grill and set aside. Discard the marinade.
In a bowl, mix the onion and mushrooms, add the olive oil and season to taste with salt and pepper. Add the vegetable mixture to the basket and broil over medium-high heat for 12 minutes, mixed occasionally. Pour the mixture into a bowl and set aside.
Cut the chicken into strips or cubes and mix in the bowl with the vegetable mixture. Add the reserved marinade and return to the barbecue basket. Cook on direct fire for 8 more minutes. Remove and serve.

PRESENTATION

To serve, hand out the lettuce leaf tacos with the chicken and vegetable filling.
