Dare to prepare this New York Strip Steak to indulge your family or friends. To cook this cut of meat is very important that you let stand at room temperature after cooking, as this will make the juices are redistributed in the muscle and that when serving the cut, it keeps its juice.

Ingredients

2 servings
  • 1 piece of New York 2 inches thick
  • 100 grams of unsalted butter
  • 1 head of garlic
  • 1/4 of Cup of Onion Ash
  • 1 piece of green lemon
  • 2 spoonfuls of olive oil
  • 2 pieces of red onion for onion ash
  • 3 spoonfuls of sea salt for onion ash
  • 1 tablespoon of black pepper for onion ash

    Preparation

    Prepare your Weber® grill for indirect medium fire (350º - 450ºF or 175º - 232ºC). To prepare the onion ash, remove the base of the onions and cut them into wedges, place over medium medium heat for 30 minutes or until they are carbonized and remove from heat. Let stand at room temperature and grind in a blender or food processor until pulverized, season to taste with salt. Set aside.
    Cut the top third of the garlic head exposing the cloves, add a little olive oil and wrap it in aluminum foil. Place it on indirect fire for 40 minutes.
    Let your cut stand at room temperature for 10 minutes before grilling. Place the Weber® Plate or a pan that can tolerate high temperatures at indirect heat and preheat for 10 minutes. Add the butter and once melted, submerge the meat cut for 15 minutes.
    Raise the temperature of your grill on high heat (450º - 550ºF - 232º - 287ºC) and transfer the Weber® Plate or pan over direct high heat.
    Remove the cut from the pan and bread it with the onion ash. Return the piece of meat to the pan and let spend 3 to 5 minutes on each side and until the internal temperature is 125ºF or 52ºC
    Place the cut on a board and let stand for 5 minutes, squeeze the garlic in the butter that was left in the pan and stir until you get a homogeneous mixture. Season to taste with salt and pepper. Serve New York Strip Steak with garlic butter.
