Ambrosia dessert for vegans is a variation of the traditional dessert, ideal for people who are vegan or who are lactose intolerant. Its ingredients are very nutritious, among them we find tofu, poppy seeds and coconut.

Ingredients

6 portions
  • 1 cup fruit, varied chopped (fresh pineapple, apples, oranges, strawberries and organic grapes)
  • 1/2 cups grated coconut
  • 1 tablespoon cornstarch
  • 6 tablespoons lemon juice
  • 3 tablespoons sugar
  • 3 tablespoons orange juice
  • 1/2 cups tofu, soft, mashed
  • 2 teaspoons Orange zest
  • 1 teaspoon poppy seed, (optional)

Preparation

In a large bowl, mix fruit and coconut until well blended. Refrigerate
Mix the cornstarch with the lemon juice in a medium saucepan and stir until well blended. Place the saucepan over low heat and add the sugar and orange juice.
Cook, stirring constantly, until the mixture thickens, about 5 to 10 minutes. Remove the pan from the heat and let it cool completely.
Add the tofu puree, orange peel and poppy seeds in the juice mixture and refrigerate at least 1 hour.

PRESENTATION

Pour the dressing over the fruit just before serving.
