Ingredients

3 portions
  • 2 cups amaranth
  • 3 avocados
  • 1 cup tomtato, chopped into small cubes
  • 1 tablespoon olive oil
  • 1/4 cups fresh coriander, finely chopped and disinfected
  • salt and pepper

Preparation

In a bowl, mix amaranth, tomato and coriander. Season to taste.
Cut the avocados in half, remove the bone and fill with the previous mixture.
Pour a little olive oil over the stuffed avocado. Serve cold.
