Prepare this delicious breakfast of toasted wholemeal bread with rich and thick spices spiced with oregano in tomato sauce. Accompany it with a plate of fruit and a good cup of coffee, to have a full and balanced breakfast.

Ingredients

4 portions
  • 1 tablespoon canola oil
  • 1/8 onions
  • 1 clove garlic
  • 4 tomatoes, cut in quarters
  • 2 guajillo chilies, deveined and clean
  • 1 serrano pepper, deveined and clean
  • 1/4 cups Vegetables soup
  • 1 cup pinto beans, whole and cooked
  • 1 teaspoon salt
  • 1/2 teaspoons black pepper
  • 1 tablespoon fresh oregano
  • 4 slices wholemeal bread, with seeds, toast
  • 4 branches fresh oregano, to decorate

Preparation

Heat a deep skillet over medium heat and add the oil. Fry the onion, garlic, tomatoes and chilies until they take color. Cool slightly
Blend the previous preparation together with the vegetable broth. There should be a smooth and slightly thick sauce.
Return the sauce to the pan and cook 5 minutes or until thick. Add beans, oregano, salt and pepper. Let thicken.
Serve the beans on toasted bread and decorate with a sprig of fresh oregano.

TIPS

You can also do it with baked beans.
