Ingredients

4 portions
  • 3 carrots, washed and peeled
  • 3 pumpkins
  • 2 egg whites
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 escarole lettuce
  • 100 grams baby spinach
  • 1 bell pepper
  • 8 figs
  • 150 milliliters olive oil
  • 50 milliliters balsamic vinegar
  • 70 grams bee honey

Preparation

Preheated oven at 190 ° C.
Cut the carrot and pumpkin into very thin julienne strips.
Blanch the carrot and pumpkin in salted water, drain and place in a bowl.
Add the egg whites, salt, pepper and mix until integrated.
Form the pancakes with two tablespoons of the mixture and place on a baking sheet.
Bake for 25 minutes.
Wash and disinfect lettuce and baby spinach. Dry perfectly to last longer in better condition. Mix the leaves in a bowl.
Cut the pepper into thin strips and the sliced ​​figs. Mix all the ingredients and reserve.

En horno no quedan, quedan crudas,deben freírse y ponerle harina, si quieren que sean damas poner harina integral. No quedan tal cual la receta.
