Preparation
Preheat the oven to 350. Prepare the tray where you will put the pizza by covering it with waxed paper and spray with cooking spray.
Put the cauliflower to cook in boiling water, Since this cooked put the cauliflower on a kitchen towel (or on paper towels) and let it cool for a couple of minutes. Use the dish towel to drain the excess water from the cauliflower. (Alternatively, you can use paper towels to take a handful of cauliflower at a time and squeeze out excess water.)
Cut the stems of the cauliflower and discard (or save for another recipe). Chop the remaining flowers and place in a food processor until you have finely chopped cauliflower pulp. (You must have 2-3 cups of the "pulp".)
Replace the cauliflower pulp in a dish towel to remove as much moisture as possible from the cauliflower or crumble when baked.
Add the cauliflower "pulp" to a large bowl. Add the egg, salt, Parmesan cheese, mozzarella cheese, Italian seasoning, and garlic powder and mix with your hands until all the ingredients are incorporated. Form a ball, put the ball in the center of the baking sheet. Stretch in a circle. and take to the oven.
Bake 10 to 15 minutes until golden brown. Remove from the oven. Pour the pizza sauce on top. Sprinkle with cheese (and any other ingredients you want) and return to the oven (on the baking sheet) for another 10 to 15 minutes until the cheese is melted. Serve hot and top with fresh parsley or basil, if desired.
