Ingredients

4 portions
  • 1/2 cups Water
  • 2 cups spinach leaf
  • 3 serrano peppers
  • 1 cup cornmeal
  • 4 cups Cauliflower Eva® Bits, 454 g
  • 1 tablespoon garlic powder
  • to taste salt
  • to taste black pepper
  • enough chicken tinga, To accompany

Preparation

Pour the Cauliflower Eva® Bits into a pot of hot water. Cook for 4 minutes, drain and cool down under the stream of cold water. Remove excess water with the help of a cotton cloth. Reserve until use.
Blend the spinach, the serrano pepper with a little cold water until you have a pasty mixture. Reserve until use. Strain and reserve the pulp.
In a bowl place the Cauliflower Eva® Bits, the garlic powder, the cornmeal, the spinach pulp, salt and pepper, and mix until integrated. With the help of your hands, form balls and reserve.
In a tortilla press, place a plastic and press the ball to form the tortilla.
On a comal over medium heat, cook the tortilla on both sides until lightly golden brown.
Accompany your tortilla with chicken tinga.

TIPS

If you want to intensify the color of the tortillas, blend a little cilantro.
