These cauliflower pancakes will delight your family, they are delicious and a good vegetarian strong dish.

Ingredients

4 servings
  • 1 piece of cauliflower median
  • 150 grams of Manchego cheese sliced
  • 1 clove of ground garlic
  • 4 pieces of egg
  • 5 pieces of tomato large grind
  • 1 branch of coriander
  • 3 spoonfuls of wheat flour integral
  • 1 piece of onion
  • olive oils
  • sea ​​salt and pepper
  • 1 piece of chipotle chile pepper (optional)

    Preparation

    The cauliflower is steamed, with salt water, once cooked let it cool.
    Then it is separated into medium bouquets and a slice of cheese is placed in the middle, pressing with the hand so that everything is united and so on with all the cauliflower and cheese.
    Then beat the egg whites to the point of nougat and add the yolks little by little. Then each pancake is passed through flour, then the egg previously beaten and fried in oil browning on all sides, remove and drain on paper towels.
    In a saucepan put a tablespoon of oil and then fry the ground tomato with onion and garlic and chipotle if desired, season with salt and pepper. Let it boil for 10 minutes and then the pancakes are placed, boil for about 20 minutes so that the tomato has consistency and everything is seasoned. It must be with broth.

    TIPS

    Do not overcook the cauliflower at the beginning to make the preparation of the pancakes easier. They can be served with tortillas.
