This ceviche is ideal for the hot season because it is very fresh as well as being nutritious and very economical. Soy ceviche recipe.

Ingredients

4 portions
  • 2 cups soy, textured
  • 1/4 onions
  • 1 clove garlic
  • 1 leave bay (laurel)
  • enough Water, necessary amount
  • 3 tomatoes, chopped
  • 1/2 onions, chopped
  • 1 serrano pepper, chopped
  • 1/4 cups fresh coriander, chopped
  • 1 1/2 cups ketchup
  • enough orange soda, necessary amount
  • 3 lemons, (the juice)
  • 1 tablespoon English sauce
  • 6 drops tabasco sauce
  • 1 avocado from Mexico, To accompany
  • 6 tostadas corn, To accompany
  • sauces, of oil, to accompany

Preparation

Heat the water in a pot with the clove of garlic, onion, bay leaf and salt. When it breaks the boil add the soy and leave 10 minutes on low heat (so that it does not spill) it is turned off, it is covered and it is left to rest 5 minutes, it drains very well and it is left to cool down.
Apart in another container mix catsup sauce, orange soda, English sauce, tabasco sauce, lemon juice, tomato, onion, chili and cilantro mix everything very well.
Since the soy was cooled we added it to the bowl where we mix the other ingredients and season with salt. And let it sit in the refrigerator 15 minutes so that the flavors are well integrated and go!

PRESENTATION

Assemble the toast adding a spoonful of the ceviche, topped with a little avocado and a leaf of coriander and a few drops of oil sauce or the one of your choice.

TIPS

To cool the soybean more quickly, after draining it, you can put it in a bowl with water and ice, then cool it and again it's ready!
