Cucumbers Stuffed with Chicken Salad

Prepare these delicious cucumbers stuffed with creamy chicken salad with celery, purple onion, feta cheese, yellow elotitos, a touch of lemon, mustard and curry powder. A delicious cold dish that is prepared in 20 minutes.

Ingredients

4 servings
  • 2 cups of chicken cooked and shredded, for salad
  • 1/4 of Cup of celery finely chopped, for salad
  • 1/8 of Cup of red onion finely chopped, for the salad
  • 1/4 of Cup of corn shelled yellow
  • 1/4 of Cup of parsley finely chopped, for salad
  • 1 tablespoon of curry powder
  • 1 tablespoon of scallion finely chopped, for the salad
  • 1/4 of Cup of feta cheese cut into cubes
  • 1 tablespoon of lemon juice for the salad
  • 1/2 Cup of Greek yoghurt for the salad
  • 1 tablespoon of garlic powder for the salad
  • 1 tablespoon of mustard for the salad
  • 1 tablespoon of Salt for salad, and to season cucumber
  • 1 pinch of black pepper for salad, and to season cucumber
  • 2 pieces of cucumber
  • 2 spoonfuls of olive oil
  • 1 piece of serrano pepper cut into slices, to decorate
  • 1 piece of radish cut in half moons, to decorate
  • 1 piece of cambray onion cut into rings, to decorate
  • to taste of coriander leaf to decorate

    Preparation

    For the chicken salad, in a bowl mix all the ingredients of the salad, season to your liking with salt and pepper and reserve.
    With the help of a peeler, remove the peel from the cucumbers and cut them in half. Spoon with a spoon, bathe with a little olive oil, season with salt and pepper to your liking and top with the chicken salad.
    Garnish with slices of serrano chili, onion, radishes, and coriander leaves. It serves.

    PRESENTATION

    Garnish with onion rings, cilantro or parsley and sliced ​​serrano pepper.

    TIPS

    You can leave the cucumber skin to make them healthier.
