Ingredients

10 portions
  • 2 cups sea salt
  • 2 tablespoons yellow lemon zest
  • 2 tablespoons Orange zest
  • 2 tablespoons dill, cool
  • 10 black pepper, fat, crushed
  • 1/2 cups brown sugar
  • 2 cups beets, cut into sheets
  • 2 kilos fresh salmon, complete fish market

Preparation

In a medium bowl mix the grain salt with the lemon and orange zest, dill, pepper and sugar. Reservation.
In a tray with self-adhering plastic, spread the beet blades until the surface is covered, add a little of the bowl mixture above the beets, add the salmon and cover completely with the rest of the bowl mixture.
It wraps perfectly well the salmon, so that the whole surface is covered with beets and plastic.
Refrigerate the salmon for 1 day so that the flavors are impregnated.
Remove from refrigeration, discover the salmon wrap the salt as much as possible until it is clean.
Cut the preparation into thin slices, serve and enjoy.

PRESENTATION

Serve salmon slices with a little olive oil and fresh dill on a plate.
