Ingredients

4 servings
  • 1 tablespoon of oil
  • 1/2 piece of onion in cubes
  • 1 clove of garlic
  • 4 pieces of tomato In rooms
  • 2 pieces of tomato in halves
  • 2 pieces of morita chile pepper deveined and seedless
  • 2 pieces of black pepper entire
  • 1 tablespoon of cumin whole
  • 2 cups of Water
  • 1 Cube of Knorr® vegetable broth
  • 1 tablespoon of coriander
  • 1 tablespoon of oil for the filling
  • 1/8 of piece of White onion filleted, for filling
  • 1 Cup of zucchini cut into thin strips, for filling
  • 1 Cup of rajas poblanas for the filling
  • 1 tablespoon of Knorr® Chicken Broth for the filling
  • enough of Water
  • 1 tablespoon of baking soda
  • 12 pieces of nopal big
  • 1/2 piece of avocado in slices, to decorate
  • 4 spoonfuls of fresh cheese to decorate
  • 1/8 of piece of red onion filleted, to decorate

    Preparation

    For the sauce, in a saucepan over medium heat, fry the onion and garlic with the oil until they are bright. Add the tomatoes, the tomatoes, the morita pepper, the black pepper, the cumin and cook for about 10 minutes.
    Add the water and when the boil is gone, dissolve the cube of Knorr® vegetable stew, cook for about 10 minutes.
    Blend the preparation with the cilantro until you get a smooth sauce and return to cooking for 5 more minutes.
    For the filling, heat the oil in a pan over medium heat and add the onion. Add the squash and the slices, cook 5 minutes and season with Knorr® chicken soup. Remove and reserve.
    In a pot with boiling water, cook the nopales with a little baking soda until they are soft, drain and reserve.
    Fill the nopales with the vegetable stew and roll up, secure with a toothpick if necessary.
    Serve the enchiladas with the sauce and garnish with avocado, fresh cheese and purple onions. Enjoy

    TIPS

    The baking soda helps the nopales release all the drool during cooking, plus they will have a brighter color.
