That's why we give you this easy recipe of Enfrijoladas de Claras Stuffed with Nopales, which you can make with delicious frijolitos de olla.

Ingredients

4 servings
  • 1 tablespoon of olive oil for the filling
  • 1/2 Cup of onion finely chopped, for filling
  • 1 tablespoon of garlic Finely chopped, for filling
  • 2 cups of nopal cut into cubes, for filling
  • 1/4 of Cup of corn kernels For the filling
  • 1/4 of Cup of tomato cut into cubes, for filling
  • 1 tablespoon of coriander Finely chopped, for filling
  • enough of Salt
  • enough of black pepper
  • 2 cups of refried beans refried, with broth, for the sauce
  • 1/4 of piece of onion for the sauce
  • 2 spoonfuls of ground chili pepper for the sauce
  • 1 tablespoon of olive oil for the sauce
  • 1 1/2 cups of San Juan® egg whites
  • 1 tablespoon of garlic powdered
  • 1 tablespoon of onion powder
  • enough of spray oil
  • 1 piece of avocado cut into segments, to decorate
  • 1/2 Cup of Panela cheese cut into cubes, to decorate
  • enough of fresh coriander To decorate

    Preparation

    For the filling, heat the oil over medium heat and cook the onion and garlic until they are transparent. Add the nopales and cook until they release the slime, add the corn, the tomato, the coriander, season with salt and pepper. Remove and reserve.
    For the sauce, blend the beans with the onion and the chipotle chile until you get a smooth sauce.
    Heat the oil over low heat in a pot and cook the bean sauce for 5 minutes, season to your liking. Reserve hot.
    Beat the San Juan® Egg Claras with the garlic and onion powder, season with salt and pepper.
    In a frying pan sprinkle a little spray oil, pour a little egg whites of San Juan® Egg and cook for 2 minutes on both sides, until cooked. Repeat until you finish with the whites.
    Place a little filling in a light tortilla and close like a quesadilla.
    On a plate, place a mirror of bean sauce, place the stuffed tortillas, sauté and decorate with slices of avocado, cubes of panela cheese and cilantro. Enjoy

    TIPS

    Use a Teflon pan to cook the whites and do not stick. If the bean sauce thickens too much, add more bean broth.
