Ingredients

6 portions
  • 1 1/4 cups butter, at room temperature
  • 1/2 cups sugar
  • 1 teaspoon liquid vanilla
  • 1 egg
  • 1 1/2 cups flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoons salt
  • 1 teaspoon baking soda
  • 3/4 cups amaranth
  • enough flour, to extend

Preparation

In a bowl add butter and sugar, whisk until creamy.
Add the essence of vanilla, egg, flour, cinnamon, salt, baking powder and amaranth, beat until integrated.
Place the dough on the table and knead until you obtain a homogeneous and smooth dough.
On a floured surface, spread the dough approximately 3 mm thick and with the help of a round cutter, cut several and reserve.
Heat a comal over low heat and cook the gorditas for 4 minutes on both sides.
Serves warm with a coffee pot.

TIPS

You can substitute wheat flour for amaranth flour.
