Ingredients

4 portions
  • 1 package slice of Manchego Singles® cheese
  • 1 eggplant
  • 1 pumpkin, chopped into small cubes
  • 1/2 red peppers, cut into small cubes
  • 1/2 yellow bell peppers, cut into small cubes
  • 1/2 cups tomato puree
  • 2 tablespoons onion, chopped
  • 1 clove garlic
  • lettuce
  • parsley, chopped
  • salt
  • black pepper
  • olive oils

Preparation

CUT half of the eggplant in slices 2 cm thick and the rest of the eggplant in chicho cubes. Immerse in milk and let stand in refrigeration for at least 2 hours, drain and reserve.
PLACE the oil in a pan and season the onion and garlic.
ADD the rest of the chopped vegetables and cook until smooth. Add the tomato puree and season with salt and pepper.
SMOKE the slices of eggplant and once cooked, place on each serving of vegetables.
PLACE on each aubergine a slice of Manchego Singles Cheese and sprinkle with chopped parsley.
SERVE on lettuce leaves.
