Ingredients

12 portions
  • 3 tablespoons onion, finely chopped
  • 1 cup edamame
  • 1 1/2 cups broccoli
  • 2 1/2 cups Vegetables soup
  • 1 cup whole-grain rice
  • 2 tablespoons chives, finely chopped
  • 1 cup tofu, diced
  • 1 avocado, To accompany
  • to taste salt and pepper

Preparation

In a saucepan over low heat heat the oil, add the onion until it is completely transparent, add the edamames, broccoli cook for 2 minutes.
Add the whole rice and incorporate with the rest of the ingredients, pour the vegetable broth, season with salt and pepper, add the onion, cover and let cook for 20 min.
