Ingredients

6 portions
  • 6 robalo's steak, of 180 grams each
  • enough olive oil
  • 1/4 cups onion, chopped
  • 2 guajillo chilies, deveined
  • 1 1/2 cups Water
  • 1 garlic, little
  • 1/4 cups apple vinegar
  • 1/4 cups Splenda, granulated sweetener
  • 1 leave bay (laurel)
  • 2 branches fresh thyme
  • 2 black pepper, whole english
  • 2 grains black pepper, whole
  • 1/2 teaspoons oregano
  • 1 cup orange juice
  • 1 cup tangerine juice
  • 1/2 cups lemon juice
  • 1 cup grapefruit juice
  • 1 1/2 cups double cream
  • 1 tablespoon Splenda, granulated sweetener
  • 4 branches thyme
  • 7 tablespoons butter, cold in cubes to bind the salt

Preparation

For the snook: Season the sea bass with salt and pepper.
Cook in a pan with a little oil. When cooked, place a spoonful of marinade on top.
Adobo: Cook the onion with the guajillo chili uncovered in 1½ cups of water. Grate the other ingredients and mix them with the cooked ingredients. Season to taste.
Reduction of four citrus fruits: Place the fruit juices in a pot and cut in half with the cream, SPLENDA® No Calorie Sweetener Granulated and the thyme.
Finally, add the butter.

PRESENTATION

Place the fish on 2 tablespoons of mashed potatoes. Add 2 tablespoons of the reduction of four citrus fruits.

TIPS

Accompany this dish with a Chardonnay wine.
