Prepare a fast, healthy and economical meal with this delicious recipe of Mushroom and Nopales Tostadas. The secret to this easy recipe is to cook the mushrooms with garlic and guajillo.

Ingredients

2 portions
  • 1 tablespoon oil
  • 1/4 onions, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 1 cup mushroom, filleted
  • 1 cup nopal, in julienne, cooked
  • 3 branches epazote
  • 1 Chile de árbol pepper, finely chopped
  • enough salt
  • enough black pepper
  • 2 avocados
  • 1/4 cups fresh coriander
  • 2 tablespoons lemon juice
  • 1 tablespoon garlic, ground
  • 1 tablespoon olive oil
  • 2 tomatoes, in cubes
  • 1/4 cups red onion, finely chopped
  • 1/4 cups fresh coriander, finely chopped
  • 3 tablespoons serrano pepper, finely chopped
  • 4 corn tortilla chip , baked

Preparation

In a skillet at medium heat cook the onion, garlic with a little oil. Add the mushrooms, the nopales, the epazote, the tree chile, the salt and the pepper and cook until they reduce the liquids. Remove from heat.
For the guacamole, blend the avocado with the cilantro, the lemon juice, the salt, the garlic powder, and the olive oil until you get a creamy and smooth mixture. Set aside
For the pico de gallo, mix the tomato with the purple onion, the cilantro, the chile serrano, the salt and the pepper.
On a baked corn toast spread the guacamole add the mushroom stew and decorate with the pico de gallo.

PRESENTATION

Serve the toastada and decorate with pico de gallo, accompanied with a rich water drink.

TIPS

Use baking soda to bake your nopales, so they will not get sluggish and have a brighter color.
