Tostadas de Champiñones con Nopales

Prepare a fast, healthy and economical meal with this delicious recipe of Mushroom Tostadas with Nopales. The secret to this easy recipe is to cook the mushrooms with garlic and guajillo.

Do not forget that for nopales you can use bicarbonate, and with that you can cook them better, they will not be so slimy and will have a brighter color. With what else would you accompany this recipe of Mushroom Tostadas with Nopales?

Ingredients

2 servings
  • 1 tablespoon of oil
  • 1/4 of piece of onion finely chopped
  • 1 tablespoon of garlic finely chopped
  • 1 Cup of mushroom filleted
  • 1 Cup of nopal in julienne, cooked
  • 3 branches of epazote
  • 1 piece of Chile de árbol pepper finely chopped
  • enough of Salt
  • enough of black pepper
  • 2 pieces of avocado
  • 1/4 of Cup of coriander
  • 2 spoonfuls of lemon juice
  • 1 tablespoon of garlic powdered
  • 1 tablespoon of olive oil
  • 2 pieces of tomato in cubes
  • 1/4 of Cup of red onion finely chopped
  • 1/4 of Cup of coriander finely chopped
  • 3 spoonfuls of serrano pepper finely chopped
  • 4 pieces of corn tortilla chip baked

    Preparation

    In a skillet at medium heat cook the onion, garlic with a little oil. Add the mushrooms, the nopales, the epazote, the tree chile, the salt and the pepper and cook until they reduce the liquids. Reservation.
    For the guacamole, blend the avocado with the cilantro, the lemon juice, the salt, the garlic powder, and the olive oil until you get a creamy and smooth mixture. Reservation.
    For the pico de gallo, mix the tomato with the purple onion, the cilantro, the chile serrano, the salt and the pepper.
    On a baked corn toast spread the guacamole add the mushroom stew and decorate with the pico de gallo.

    PRESENTATION

    Serve the toast and decorate with the pico de gallo, accompanied with a rich fresh water.

    TIPS

    Use baking soda to bake your nopales, so you will not be sluggish and have a brighter color.
