  • 4 nopales, big and tender
  • 4 eggs
  • 1 green bell pepper, big
  • 1/2 onions
  • olive oils, enough to fry
  • 1 Cube broth, juicy rib
  • salt, to taste
  • black pepper, to taste
  • 2 teaspoons epazote, dry


Heat a pan over a high heat and add the olive oil.
When the oil is hot add the sliced ​​onion along with the bell pepper cut into strips, the nopales also cut into strips, the epazote, the rib cube and mix.
Let cook for 5 to 8 minutes or until the onion and pepper are soft, nopales have changed color and the rib cage has dissolved.
In a separate bowl, shell the 4 eggs, season with salt and pepper and lightly beat with a fork and add this mixture to the nopales in the pan, lower the heat and mix.
Let cook until the eggs are cooked, stirring occasionally to avoid burning the preparation, if olive oil is missing because we see it dry add a little more mix and remove from the fire.


It can be accompanied with corn tortillas, panela cheese and beans from the pot.


The dry epazote gives a different flavor to the preparations, potentiates the flavor.
