Mix the oats and grated coconut in the blender so that the oatmeal is pulverized.
Add the 3 eggs and add until you have a homogeneous mixture.
Add the sweetener you are going to use, being careful not to overdo it since this type of extracts sweeten more than sugar, and knead by hand for better results.
Divide and bake the dough at 180ºC until they look golden on the outside, the time will depend on the size of the cookies.
