Ingredients

4 servings
  • 2 pumpkins large zucchini
  • 1 Cup of flour
  • 2 eggs
  • 1 Cup of ground bread
  • 1/2 Cup of Parmesan cheese grated
  • 1 teaspoonful of oregano
  • 1 teaspoonful of Salt
  • 1/2 teaspoonful of black pepper
  • 2 spoonfuls of olive oil
  • 1/4 of onion finely chopped
  • 1 clove of garlic finely chopped
  • 5 tomatoes without peel and cut into cubes
  • 2 pinches of Salt
  • 1 pinch of black pepper
  • 1 teaspoonful of oregano

    Preparation

    Cut the pumpkins into medium thick slices.
    Place the flour in one bowl, in another the beaten eggs, and in another, combine the bread with the cheese, the oregano, the salt and the pepper.
    Sprinkle each slice first with flour, then with egg, and finally with bread and cheese.
    Place the pumpkins in the air fryer and fry at 390 ° C for 7 minutes or until golden brown and crispy. Reservation.
    For the sauce, in a deep pan heat the oil and cook the onion until transparent, add the garlic and the tomato. Cook over low heat for 10 minutes, add oregano and season.
    Serve the pumpkins with the tomato sauce and garnish with chopped basil.
