Pumpkin Enchiladas with Chicken

Can you imagine low-carb enchiladas? Now you can prepare them with this easy and delicious recipe of chicken with morita sauce wrapped in pumpkin slices and accompanied by fresh cheese. You will love it!

Ingredients

4 portions
  • 5 tomatoes
  • 5 dried morita chili peppers
  • 1/4 onions
  • 1 clove garlic
  • 1 tablespoon garlic
  • 1 chicken breast, shredded
  • 3 zucchini
  • 1 tablespoon olive oil
  • 1/2 cups panela cheese, fallen apart
  • to taste fresh coriander, to decorate

Preparation

Preheat the oven to 180 ° C.
In a comal, roast the tomatoes, chiles, onion and garlic. Blend until you get a sauce.
In a saucepan heat the oil pour the sauce and cook for 10 minutes. Reserve a little of the sauce to serve, and add the chicken breast to the pan. Cook 5 more minutes.
With the help of a peeler, cut the pumpkins into thin slices.
On a board place 3 strips of pumpkin and stuffed with chicken.
Place the enchiladas in a refractory oven, add a little olive oil, season with salt and pepper. Bake 10 minutes or until pumpkins are soft.
Serve hot with more salsa, cheese and cilantro.
