Vegetarian recipes or vegan recipes are gaining popularity, and although they may seem difficult or without great flavor, this recipe for Quinoa and Lentil patties prove otherwise.

The delicious thing about this dish is that quinoa is a cereal with a high protein content, which makes it very nutritious. In addition, this recipe for Quinoa and Lentil patties can be accompanied with a rich garlic and yogurt dip.

Ingredients

4 portions
  • 3 cups Water
  • 1 1/2 cups quinoa
  • enough salt
  • 1 1/2 cups lentil, cooked
  • 1 egg
  • 1/2 cups parmesan cheese
  • 1/2 cups ground bread
  • 3 tablespoons red onion
  • 1/2 cups red pepper
  • 1 tablespoon garlic, finely chopped
  • 1 tablespoon paprika
  • 1 tablespoon fresh coriander, finely chopped
  • enough salt
  • enough black pepper
  • 1 package cream cheese, for the dip (190 g) (6.7oz)
  • 1/4 cups yogurt, for the dip
  • 2 cloves garlic, finely chopped, for the dip
  • enough lettuce, To accompany

Preparation

Preheat the oven to 180°C. (357 °F)
In a pot with 3 cups of boiling water and a little salt, cook the quinoa for 15 minutes or until it burst. Drain and cool.
In a processor, process the lentils until you obtain a puree.
In a bowl, mix the lentils with the cooked quinoa, the egg, the parmesan cheese, the ground bread, the red onion, the red pepper, the garlic, the paprika, the cilantro, season with salt and pepper.
Form patties on a wooden board with your hands.
Place on a previously greased tray and bake for 15 minutes or until golden brown.
For the dip, in a bowl, add the cheese with the yogurt, add the garlic, season with salt and pepper.
Serve patties with the dressing and enjoy.

PRESENTATION

On a plate, accompanied by a mixture of lettuce and the garlic dip.

TIPS

Rinse the quinoa before cooking, otherwise due to its high content of saponins, it could become bitter. So that the patties don't brake dpown, it's necessary to compress them very well with your hands, in this way they will remain firm.
