  • 1 package quinoa
  • 1 can sweet corn
  • 1 cup bean, Cooked
  • 1 Bell pepper
  • 2 tomatoes
  • 1 clove garlic
  • 1/4 green onions
  • 1 zucchini
  • 1 tablespoon cumin powder
  • 1 tablespoon chilli powder
  • salt
  • feta cheeses, to taste
  • cream, to taste


Put 1 cup of quinoa to cook with 2 of water. Make sure you do not run out of water and put one more cup if necessary. It will be cooked when the center of the quinoa grain is no longer hard. The quinoa will look spongy.
In a pot pour olive oil and garlic for 1 minute.
Add the onion, the spoonful of cumin and the tablespoon of chili. The onions should be mixed well with the powdered ingredients.
Add the tomato and mix for 1 or 2 minutes.
Add all the vegetables: pumpkin, pepper and corn, as well as the cooked beans with a little of the broth. If it is necessary to add a little water so that it is like a stew in which the vegetables are going to be cooked. Season with salt and pepper.
Once boiling and the pumpkin is fully cooked, add the cooked quinoa and incorporate all the ingredients. Rectify the seasoning and let boil all about 5 minutes.
Ready, add cream and cheese.


Sprinkle some chopped cilantro.


You can add dry tree chili.
