4 portions
  • 1 cup quinoa, washed
  • 2 cups water
  • 1 teaspoon salt
  • 4 eggs, cooked and cut in halves
  • 1 italian lettuce, washed, disinfected and dried. leaves in halves
  • 1 cup spinach, washed, disinfected and dried
  • 1 cup cherry tomato, in halves
  • 1 cup olive oil, for the vinaigrette
  • 1/2 cups balsamic vinegar, for the vinaigrette
  • 1/2 teaspoons salt, for the vinaigrette
  • 2 pinches pepper, for the vinaigrette
  • 1 pinch garlic salt, for the vinaigrette


In a small pot, cook the quinoa with water and salt over low heat until the liquid has been absorbed, about 15 minutes. Chill
Mix the quinoa, the egg, the lettuce, the spinach and the tomato. Reservation.
Combine the ingredients of the vinaigrette and mix until incorporated.
Serve the salad with the vinaigrette and enjoy.


Serve in an extended dish and accompany with wholemeal crackers or slices of toast.


The quinoa should be washed very well to remove the saponin which is a substance that tends to embitter.

Deliciosa yo me adiciones palta quedó estupenda. Y como mi esposo no come ensalada sola le hice unas tortillas de trigo.

Esta muy rica la ensalada, solo que le puse menos aceite y menos vinagre balsámico porque queda muy fuerte. De ahí en fuera todo queda muy bien.

La proporción de vinagreta es demasiada. Yo hice solo la mitad y sobre muchísima!
