Rajas with Cream and Cheese

If you like rajas with cream, this version of rajas with cream and cheese you will love it. Prepare taquitos of this delicious recipe that besides having a spicy flavor is very creamy and you will want to make it very often.

Ingredients

  • 8 poblano peppers
  • 2 spoonfuls of oil
  • 1/4 of White onion finely chopped
  • 1 Garlic finely chopped
  • 1/2 Cup of a grain of corn
  • 3/4 of Cup of sour cream
  • 1 Cup of Manchego cheese grated
  • 1/2 teaspoonful of Salt
  • 1/4 of teaspoonful of Pepper

    Preparation

    In a comal, roast the chiles. Place them in a bag and let them sit for 15 minutes. Peel, clean and cut into slits. Reservation.
    In a pan over medium heat, heat the oil. Sauté the onion and garlic, add the rajas and elotes and cook a few minutes.
    Add the cream and cook for 5 minutes. Add the cheese and let it melt, season and serve.

    PRESENTATION

    Accompany with corn tortillas.

    TIPS

    You can use chilacas instead of chile poblano.
