  • 1 avocado, for the dressing
  • 1/4 cups greek yogurt, low fat dressing
  • 1/4 cups lemon juice, for the dressing
  • 1/4 cups peppermint, for the dressing
  • 1 clove garlic, for the dressing
  • to taste salt, for the dressing
  • to taste black pepper, for the dressing
  • 1 tablespoon canola oil
  • 2 cups pumpkin, sliced
  • 1 teaspoon oregano
  • to taste salt
  • to taste black pepper
  • 1 package Zero Bread Zero Bimbo®
  • 1 cup yellow bell pepper, in strips
  • 1/2 cups red onion, sliced
  • 2 tomatoes, sliced
  • 2 tablespoons panela cheese
  • 2 cups Common purslane (verdolagas), clean
  • 1 teaspoon olive oil


For the green dressing, mix the avocado together with yogurt, lemon juice, mint and garlic in a processor. Season with salt and pepper, until everything is well integrated.
In a hot grill pan and with canola oil, roast the pumpkin, season with oregano, salt and pepper. Reservation.
Put together your sandwich, spread a tablespoon of avocado dressing on a slice of Zero Bimbo® bread, place the bell pepper, sliced roasted pumpkin, onion, tomato, panela cheese and purslane to taste. Add a teaspoon of olive oil, cover with another slice of Zero Bimbo® bread. Repeat until finished with the bread. Accompany with cherry tomato.


You can save the dressing and use it for some other dish, just be sure to refrigerate it properly.
