Without a doubt, one of the favorite vegetables of many people is the pumpkin. That's why we share this recipe for stuffed zucchini in Rajas Poblanas. In order to prepare this easy recipe with pumpkins, it is recommended that you do not overcook them, but lose their properties and shape.

Besides being an economical recipe and a recipe, it is a recipe that you can prepare in 15 minutes. Another great tip for your dish to be a success, is that after cooking the pumpkins, dip them in ice, to give them a brighter color.

Ingredients

4 servings
  • 4 pieces of pumpkin
  • enough of Water
  • enough of Salt
  • 1 tablespoon of truffle oil
  • 1/2 piece of onion filleted
  • 1 tablespoon of garlic finely chopped
  • 1 Cup of rajas poblanas
  • 1/3 of Cup of corn
  • 1/4 of Cup of fresh cream low fat
  • enough of Salt
  • enough of black pepper
  • enough of fresh cheese grated, to decorate
  • enough of chili flake to decorate

    Preparation

    In a pot with boiling water and salt, cook the pumpkins for 3 minutes or until they are soft. Remove and cool.
    On a board remove the tips of the pumpkin and cut in half vertically. Cup with the help of a spoon without leaving the banks.
    In a pan, cook the onion and garlic with a little oil. Add the rajas, corn, cream, salt and pepper. Remove.
    Stuff the pumpkins with the slices, decorate with the fresh cheese and the chili flakes.

    PRESENTATION

    Garnish with fresh cheese, chili flakes and enjoy.

    TIPS

    Do not overcook pumpkins, because they will lose their properties and their shape. We suggest that after cooking, immerse them in water with ice, this will give them a bright color and help to cut the cooking.
