Ingredients

4 portions
  • 1 tablespoon olive oil
  • 1 clove garlic, finely chopped
  • 2 cups nopal, cut in cubes
  • 1 cup chicken, cooked and shredded
  • 1 tablespoon oregano
  • 1/4 tablespoons cumin, ground
  • enough garlic salt
  • enough black pepper
  • 4 ancho chili peppers
  • enough avocado
  • 2 avocados, for the sauce
  • 1/2 cups chicken soup, for the sauce
  • 1 clove garlic, for the sauce
  • 1 tablespoon onion powder, for the sauce
  • 1 tablespoon fresh coriander, for the sauce
  • 1 tablespoon lemon juice, for the sauce
  • enough fresh coriander, to decorate

Preparation

For the filling, heat the olive oil in a pan over medium heat and cook the garlic, add the nopales, cook until they release the slime. Add the chicken and season with oregano, cumin, salt and pepper. Reservation.
Cut the chiles in the middle taking care not to cut them completely; Remove the seeds and devine them.
In a pot with boiling water, soak the chiles a few minutes until softened. Drain and set aside.
For the sauce, blend the avocado with chicken broth, garlic, onion powder, cilantro, lemon juice, salt and pepper until you get a smooth sauce.
Fill the chiles with the chicken with nopales, serve a thin layer of sauce on a plate, place one of the chiles and decorate with a sprig of fresh cilantro.
