Ingredients

4 portions
  • 4 pumpkins, chopped into squares
  • 1/4 cups onion, chopped
  • 1 clove garlic, chopped
  • 1 branch parsley, or cilantro to taste
  • 2 beefsteak tomatoes, cut into squares
  • 1 teaspoon chicken broth powder
  • 1 teaspoon butter
  • 1/2 teaspoons oil
  • 1 can corn, sweet

Preparation

In a saucepan over medium heat pour the butter and oil, add the chopped onion until transparent and then the garlic for a few seconds.
Add all the zucchini in squares and move with a wooden shovel until they look bright, cover them a minute to wither a little. * sweet corn is added here.
Uncover and add the parsley or cilantro and mix it, then add the diced tomato and chicken broth powder, cover for 2 minutes.
Re-uncover to mix the ingredients, now you will notice that the broth that releases the tomato, cover so that it does not dry out and leave it on low heat for 5 more minutes or until you see the well-cooked pumpkins.
Rectify the flavor and if necessary add a pinch of salt, turn off the heat and is ready.

PRESENTATION

It is accompanied by white rice and refried beans.

TIPS

If you do not release broth, you can add 1/2 cup of water.

Muy fácil y muy buena. Le pondría en ingredientes sal y pimienta y quitaría el caldo de pollo, porque soy vegetariana :) saludos
