Tomato Ball with Egg and Baked Spinach

Breakfast is the most important part of the day, which better than accompanying it with a tomato, this recipe is as original as it is nutritious because it will provide all the energy you need in your day.

Ingredients

4 portions
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1 cup milk
  • 1 pinch nutmeg
  • 4 beefsteak tomatoes
  • 1 cup spinach
  • 4 eggs
  • 2 tablespoons oregano
  • to taste salt and pepper

Preparation

Preheat the oven to 180 ° C.
In a saucepan add the butter and cook until it melts, add the flour and cook it without stopping to move. Add the milk, season with nutmeg, salt and pepper, let it cook until it thickens and has the consistency of sauce. Let cool and reserve.
Cut the tomatoes from one end, and with a spoon spoon the tomatoes and remove the seeds. Reservation.
Place the tomatoes in a tray and place 2 tablespoons of béchamel, spinach and an egg for each tomato, season with oregano, salt and pepper.
Bake for 10 minutes.

PRESENTATION

In a dish accompanied by whole wheat bread and grapefruit juice.

TIPS

Choose tomatoes without ripening too much, in this way they will hold more the temperature of the oven.
