Preparation
Cut the avocado into squares. Squeeze the lemon and pour the juice of it over the squares of avocado.
Peel the pineapple and cut it to get rid of the central and fibrous part of the fruit. Chop the pineapple. Cut the cherry tomatoes into quarters and chop the surimi.
Squeeze the orange and recoleta 2 tablespoons of juice. In a bowl, mix mayonnaise, ketchup, orange juice, a pinch of salt and pepper.
Use confectionary rings to create the tower. Place the rings and first pour the avocado squares, then cover with surimi and add the layer of pineapple. Press gently with the back of a spoon. Remove the hoop carefully and distribute the tomatoes on top.
Sprinkle the parsley over the salad and sprinkle some of the ketchup and mayonnaise on the side.
