This Vegan Wire is ideal for a Monday without meat, since it does not contain any animal product. We show you how to make this easy recipe based on vegetables such as peppers, mushrooms, pumpkin, onion and corn. It is full of color and with a lot of vitamin C because of the large amount of red pepper it contains. Serve with tortillas, salsa and lemon.

The wire is a typical Mexican dish, usually served in taquerias. You can find it with beef or chicken, with or without cheese and it is usually served in iron pans to keep it warm. You can eat it with corn or flour tortillas, different sauces, lemon juice and fresh water or, why not, a beer.

Ingredients

4 servings
  • 2 spoonfuls of vegetable oil
  • 1/4 of piece of onion
  • 1 tablespoon of garlic finely chopped
  • 1 Cup of bell pepper of colors
  • 1 Cup of pumpkin
  • 1/2 Cup of mushroom
  • 1/2 Cup of white mushroom
  • 1/2 Cup of corn White
  • 1/2 Cup of asparagus
  • enough of Salt
  • enough of black pepper
  • enough of flour tortillas
  • enough of green lemon
  • enough of green sauce

    Preparation

    In a pan with oil, add the onion until it is transparent, add the garlic and the colored peppers and cook for 1 minute. Add pumpkin, mushrooms, mushrooms, white corn and asparagus. Continue cooking for 5 more minutes, season with salt and pepper and remove.
    Serve in a taco and serve with lemon and green sauce.

    PRESENTATION

    TIPS

    Do not overcook the vegetables so they do not lose properties and remain crispy.
