The patacón is a meal based on fried flattened pieces of green plantain. It is a popular dish in several Latin American and Caribbean countries for being practical and easy to prepare. Ideal for us lovers of vegetables and new flavors. Low in calories and very healthy.

Ingredients

2 portions
  • 1 banana, green
  • 1 zucchini, in julianas
  • 250 grams spinach, chopped and boiled
  • chives, to taste
  • ricotta cheese, to taste
  • canned corn , yellow
  • olive oils
  • vegetal oil
  • salt, and pepper to taste
  • parmesan cheese

Preparation

To make bananas (tostones): Heat the oil to its maximum point. Peel and cut the banana in half, finishing in 2 slices each half. Fry on both sides 1 minute. In a table crushed to obtain the desired thickness, I prefer them as finite as possible. Bring to the oil again until they are well roasted.
Put zucchini, chives, spinach and corn (corn) together with ricotta in a bowl. Add olive oil, salt and pepper to taste. Stir until all the ingredients are incorporated.
Serve bananas with our vegetarian preparation on top. Add Parmesan cheese to taste.

TIPS

It is not necessary to peel the zucchini. If you want you can also go raw, they taste great.
